Cook at optimum temperatures
Cooking at optimum temperatures will ensure your food is cooked perfectly and the amount of oil absorbed into your food is minimised.
Heat your pan to a medium heat before adding oil. Then add your oil and let it heat up slightly (allow 30 -90 seconds depending on the pan and the size of the burner).
Ensure that your food is dry by removing any extra moisture with a paper towel. This will ensure that your food will sear, sealing in flavour and preventing extra oil absorbing into your food.
Your food should sizzle when you put it in the pan, otherwise the pan is not hot enough.
Foodservice tips for better chips
The Chip Group has some great tips for cooking better chips
(see www.chipgroup.co.nz for information and training).
Keep your oil at the right temperature.
– Cook your chips between 175 degrees and 180 degrees centigrade for 3-4 minutes
– Use a digital thermometer to check the temperature of the oil each week
Shake off excess oil and let the basket hang for 20 seconds to allow extra oil to drain off.
Filter oil everyday and discard oil when it is showing signs of degradation. Signs of degradation include but are not limited to foaming, burnt taste and smoking at low temperatures.
How should I store my oil?
Store your Alfa One Rice Bran oil in a cupboard. Although Rice Bran has high antioxidant levels that protect the oil from degrading over time, it is best to store it in a cupboard away from sunlight.
