Cooking Method

1. Prepare the fish

Pin bone the salmon and remove the skin. Cut the salmon into 2 centimetre cubes. Toss the salmon in the first measure of fish sauce, then in the rice flour.

2. Prepare the vegetables

Crush, peel and finely chop the garlic. Peel the ginger and cut into matchsticks. Trim the snow peas. Deseed the pepper and cut into thin strips. Trim the spring onions and cut into 3 centimetre lengths. Trim the celery and cut into 3 centimetre lengths.

3. Heat the wok

Heat a wok or large frying pan until a drop of water sizzles in it. Add the oil. When the oil is hot, stir fry the salmon in batches until starting to colour. Remove from the wok and set aside. Drain off the oil leaving about 2 tablespoons.

4. Stir fry the vegetables

Add the garlic and ginger to the hot oil and stir fry until fragrant. Add the snow peas, pepper, spring onions and celery and stir fry for 2 minutes.

5. Combine and add sauce

Add the salmon to the wok with the lemon juice, oyster and fish sauces and fish stock. Stir fry for 1 minute to heat the salmon.
