Chicken, Basil & Kaffir Lime Stir Fry
1. Prepare the ingredients
Peel the onion and slice finely. Crush, peel and finely chop the garlic. Cut the chicken into bite-sized pieces. Cut the centre vein from the kaffir lime leaves then shred the leaves very finely.
2. Heat the wok
Heat a wok or large frying pan until a drop of water sizzles in it. Add the oil. When the oil is hot, add the onion and stir fry for 1 minute. Add garlic and stir fry until lightly golden.
3. Stir fry the chicken
Add chicken and stir fry for 1 – 2 minutes or until coloured. Add the chilli, lime leaves, soy and fish sauces and stir fry for about 5 minutes or until the chicken is cooked.
4. Add basil and enjoy
Add the basil and stir fry until the basil is just starting to wilt. Serve immediately with rice or noodles.
