Authentic Beef Koftas
1. Soak Onion
Soak the diced onion in cold water for 30 minutes. Drain and squeeze excess water through a tea towel. Soaking the onion helps to make the onion less sharp in flavour.
2. Combine the Ingredients
Place the drained onion in a mixing bowl with the other ingredients. Cream the mixture together with your hands for 2 minutes. With hands dipped in cold water, mould the kofta mix onto chopsticks or bamboo skewers soaked in water.
3. Heat BBQ
When the BBQ is hot drizzle Alfa One Oil onto the solid top and seal the Koftas as you go so they cook evenly.
Serve with hung yoghurt (greek yoghurt left to strain through a muslin cloth) flavoured with garlic and pita bread.
