NZ’s best fish and chips are cooked with Alfa One

Oppies Takeway in Rotorua has been named New Zealand’s top chip shop after taking out the number one spot in this year’s Best Chip Shop Competition. Oppies cooks with Alfa One Rice Bran Oil.

Oppies was judged the winner by a combination of public voting, mystery judging and analysis of chips to determine fat levels. .

The stringent criteria included displaying The Chip Group Training Certificates, chip taste and quality, adherence to the Industry Standards, cleanliness of the shop, customer service and chip fat content, as analysed by an independent laboratory.

Lemon Chicken Risotto

A delicious risotto recipe without cream or dairy. Fresh fish can be substituted for chicken in this recipe, replacing the tarragon with fresh dill if wished.

SERVING SUGGESTION:

Serves 4

INSTRUCTIONS:

1 onion
2 cloves garlic
¼ cup Alfa One Oil
1½ cups Arborio rice
About 6 cups boiling chicken stock
½ cup lemon juice
1 tablespoon grated lemon rind
3 tablespoons chopped fresh tarragon
250g chicken tenderloins
Lemon slices to garnish

INSTRUCTIONS:

Peel the onion and chop finely. Crush, peel and finely chop the garlic. Heat the oil in a large, deep frying pan and sauté the onion and garlic for 5 minutes until clear. Add the rice and mix to coat in the oil. Cook until the rice looks an opaque, solid white. Add the chicken stock to the pan a cup at a time, cooking, stirring until the stock has almost disappeared before adding more. After 4 cups of stock have been added, add the lemon juice and rind, tarragon and chicken. Mix in then add the remaining stock a half a cup at a time until the chicken is cooked and the risotto moist and creamy.  Serve garnished with lemon slices.

Chocolate Strawberry Cheesecake

This cheesecake was devoured by “traditional” cheesecake eaters who did not know it contained soy cream cheese or yoghurt as ingredients. These products help you enjoy such fare without worrying about your cholesterol intake or sacrificing on taste.

 

SERVING SIZE:

Serves 8

INGREDIENTS:

200g packet chocolate thin biscuits
¼ cup Alfa One Spread
250g low fat cottage cheese or soy cream cheese
2 tablespoons Alfa One Spread
250g non-fat strawberry flavoured soy yoghurt
3 egg whites
½ cup sugar
1 tablespoon gelatin
2 tablespoons boiling water
1 chip strawberries

INSTRUCTIONS:

Crush the biscuits until fine crumbs. The food processor is good for doing this. Melt the Alfa One Spread and mix into the biscuit crumbs. Press into the base of a 20cm springform  or loose bottom cake tin. Place the cottage cheese or soy cream cheese, Alfa One Spread and yoghurt into a food processor or mixer bowl. Process or beat until smooth and combined. Beat the egg whites until stiff peaks form then gradually beat in the sugar until the mixture is thick and glossy. Mix the gelatin and boiling water together until the gelatin has dissolved. Fold the egg white mixture and the gelatin into the cottage cheese mixture until combined. Hull the strawberries and chop half finely. Mix into the cheesecake mixture. Pour into the prepared base. Cover with plastic wrap and refrigerate until set. Serve decorated with the remaining strawberries.

Chocolate Brownie

Food that looks after your cholesterol intake doesn’t have to mean a life of sacrificing some of the treats we all enjoy. This Chocolate Brownie proves just that!

INGREDIENTS:

250g dark chocolate
¾ cup Alfa One Spread
3 eggs
1 cup brown sugar
1 cup flour
¼ cup cocoa
½ teaspoon baking powder
Icing sugar

INSTRUCTIONS:

Roughly chop the chocolate. Melt the chocolate and Alfa One Spread in a bowl over hot water or in the microwave. Mix to combine. Beat the eggs and sugar together until thick and creamy. Fold into the melted chocolate mixture. Sift the flour, cocoa and baking powder into the mixture. Mix until combined. Pour the mixture into a 20cm shallow square tin that has been lined with baking paper to come up and over two sides of the tin. Bake at 180 degrees C for 40 – 50 minutes, or until the brownie is set. Cool in the tin. When cold, cut into squares. Run a knife around the unpapered sides of the tin. Use the paper to lift the brownie from the tin. Dust with icing sugar.

Little herb muffins with smoked salmon and lemon cream

No-one need ever know you are looking after your cholesterol when you serve finger food as unsuspecting as these delicious bite-sized muffins.

SERVING SIZE:

Makes 33

INGREDIENTS:

2 cups flour
3 teaspoons baking powder
1/4 teaspoon salt
3 tablespoons Alfa One Spread
2 eggs
1 cup non-fat milk
¼ cup chopped fresh herbs such as a mixture of dill, parsley and chives

Smoked Salmon and Lemon Cream
2 tablespoons Alfa One Spread
200g smoked salmon
½ teaspoon grated lemon rind
1 teaspoon lemon juice
1 teaspoon wholegrain mustard

INSTRUCTIONS:

Sift the flour, baking powder and salt into a bowl. Make a well in the centre. Melt the Alfa One Spread. Beat the eggs and milk together until combined. Mix in the herbs. Pour the egg mixture and the melted spread into the dry ingredients and mix quickly with a fork until the mixture is just combined. Grease mini muffin tins with Alfa One Oil. Three quarter fill tins with muffin mixture. Bake at 190 degrees C for 10 minutes or until the muffins spring back when lightly touched. Cover with a tea towel for 5 minutes before turning onto a cooling rack. When cold, make a diagonal slit in the top of each muffin. Fill with Smoked Salmon and Lemon Cream.

Smoked Salmon and Lemon Cream

Place the Alfa One Spread in a bowl and beat with a wooden spoon until creamy. Flake in the salmon and add the lemon rind, juice and mustard. Mix until well combined. Use to fill the muffins.

Corn and Bacon Crunchies

These delicious snacks are perfect for parties or for a lunch treat. Make the bread cases in advance and store in an airtight container until ready to use, freshening in the oven for a few minutes before filling if necessary.

Corn and Bacon Crunchies

SERVING SIZE:

Makes 36

INGREDIENTS:

About 12 slices white or wholemeal sandwich bread
1/4 cup Alfa One Spread
2 rashers middle bacon
410g can creamed sweetcorn
2 tablespoons chopped chives
Chives for garnish

INSTRUCTIONS:

Cut the bread into 5 cm diameter rounds. You should get 3 rounds per slice but if the bread has been squashed in transit, you may only get 2 rounds per slice. Spread each bread round with Alfa One Spread. Place spread side up on an oven tray. Bake at 200 degrees C for 7 – 10 minutes or until the bread is golden and crisp. Remove from the oven, turn onto a cooling rack and leave until ready to use. Alternatively store in an airtight container until ready to use. Derind the bacon, remove and discard any fat and chop flesh finely. Saute the bacon for 3 minutes or until cooked. Add the corn and chives to the saucepan and heat. Top crunchies with this and heat at 150 degrees C for 10 minutes or until piping hot.
